These cookies are great for when you want to make something easy, but you also want them to feel a bit special. Browning the butter and letting them refrigerate as long as possible are some extra steps, but the payoff is worth it! They truly are a step up from the average oatmeal cookie.
I use butterscotch chips in them, but they are great with chocolate chips as well, or raisins if that's what you're into!
Recipe
1 cup butter (salted butter is preferable)
1 cup brown sugar
1 cup white sugar
2 eggs
1 tbsp. vanilla extract
1 1/2 cups flour
1/2 tsp. salt
1 tsp. baking soda
3 cups old fashioned oats
1 cup butterscotch chips, optional

Put the butter in a small saucepan and heat to medium-high heat. Let the butter melt and slowly turn brown. You know you are getting there when there is a nutty aroma, and the butter starts to silently foam after it starts boiling. This step can be a bit daunting, but don't be afraid! Just pay close attention and when the browned bits start to come up to the top, you know it's ready!
In a large mixing bowl, add in the browned butter and the sugars. Mix with a whisk until the butter has cooled and the mixture is combined.
Add in the eggs and the vanilla; whisk again to combine.
Fold in the flour, salt, and baking soda until the dough forms.
Once you have a smooth dough, mix in the oats and whatever other things you want to add in. Don't overmix, just stir until it's all combined!
Refrigerate the dough for at least 30 minutes (I like to do it while the oven is preheating). 30 minutes will work, but the cookies are even better after being refrigerated overnight!
Preheat the oven to 350. Once the oven and the dough are ready, scoop out the dough in 2 tbsp. rounds onto a cookie sheet. Place them about 2 inches apart.
Bake for about 10 minutes, until they are a light, golden brown, but not too dark. (We like soft cookies in this house!)
Right after they come out of the oven, sprinkle flaky salt over the tops to make them even better! Let them cool completely and enjoy!
